Pani Puri’s geographical variations and historical roots:

Pani Puri is said to have been created for the first time by Draupadi during the Mahabharata era. According to legend, the warriors were still in exile and had few resources when Draupadi became the Pandavas’ wife. Kunti, Draupadi’s mother-in-law, instructed her to prepare food that would satisfy the appetites of the five men using some leftover aloo sabzi and wheat bread. Draupadi prepared a bite-sized pani puri as a result, which assisted in quelling the Pandavas’ hunger.

Throughout the country’s length and width, many names and versions of the popular street dish are used. Pani Puri is a term for a “bite-sized street food” that is popular in Maharashtra and Andhra Pradesh. It is typically dipped with boiling chickpeas, a white pea combination, and sprouts with spicy pani.

A little street meal made of potato and chipea and served with pani spiced with jaljeera is known as gol gappa in north Indian states like Punjab, Jammu & Kashmir, and New Delhi. Similar to this, tamarind pulp is the primary component in the street snack known as puchkas or fuchkas in West Bengal and some regions of Bihar and Jharkhand.
